What do avocado toast, salsa, and peanut butter balls have in common? They’re all healthy snacks! Check out these recipes for simple, delicious snacks that won’t leave you feeling guilty afterwards!

Ingredients: 2 ripe avocados, juice of 1/2 lemon, 1 crushed garlic clove, pinch of crushed red chili pepper flakes, few chopped dill spring and extra for garnish, sea salt and freshly ground black pepper, 4 slices crusty bread, 1/4 diced cucumber, 8 cherry or baby plum tomatoes either quartered or chopped, 8 pitted and chopped black olives, 1 teaspoon chopped capers, 3oz crumbled feta cheese, fruity green olive oil for drizzling.
Directions: Cut avocados in half, remove seeds, and scoop flesh into bowl. Mash with lemon juice, garlic, red pepper flakes, and dill. Season with salt and pepper. Lightly toast bread and spread mashed avocado over it. Mix cucumber, tomatoes, olives, and capers together and use to cover avocado toast. Crumble feta over the top and drizzle with oil.

Mango Pineapple Salsa
Servings: 1
Prep Time: 5 min
No cooking, just blend!
Ingredients: 2 small ripe mangos peeled and diced, 1 cup diced fresh pineapple, 1/2 small red onion diced, 1/4 cup minced fresh cilantro, 3 tablespoons lime juice, 1/16 teaspoon salt.
Directions: Combine all ingredients. Let flavors sit and blend for an hour before serving.
Recipe: Peanut Butter Crunch Balls
Ingredients: 1 cup peanut butter, 1/2 teaspoon sea salt or himalayan pink salt, 2 cups pitted medjool dates, 1 cup raw blanched peanuts toasted, 1/4 cup cacao nibs.
Number of servings: 1
Time to Prepare: < 10 minutes
Tools Needed: Hands
Procedure: Process peanut butter, salt, and dates in food processor for 1 minute or until paste is formed. Add toasted peanuts and pulse for 30-60 seconds, depending on the preferred chunkiness. Add cacao nibs and pulse for 10 seconds. Roll mixture into about 15 balls and store in airtight container in the fridge for up to 2 weeks or freeze up to 2 months.
